Keto Chicken Caprese Casserole


1 rotisserie chicken (cooked) (you can bake your own chicken first) 7 oz. cherry tomatoes 8 oz. fresh mozzarella cheese 2 tbsp green pesto (no pesto substitute with basil/olive oil mix) 1 cup crème fraîche or mayonnaise 2 oz. parmesan cheese salt and pepper


1.  Preheat Oven to 400 F (200 C)

2.  Cut Chicken into Bite Size pieces or shred with a fork

3.  Slice the cherry tomatoes in half

4. Cut the Mozzarella Cheese into small pieces

5.  Place the chicken, tomatoes and mozzarella cheese into a baking dish

6.  Add Pesto, fraiche (or mayonnaise), and half the parmesan cheese

7.  Stir until evenly mixed and distributed in the baking dish

8.  Sprinkle remaining parmesan cheese on top and then put into the oven

9.  Bake for 20 minutes or until golden brown on top

10.  Serve with leafy green salad with olive oil
